Red wines

damasco
Valpolicella D.O.C.
Our fine and regal Valpolicella with fresh and fruity notes and a slightly mineral taste

- Grape varieties: 65% Corvina, 15% Corvinone, 10% Rondinella, 10% other red grape varieties
- Soil: Limestone
- Training system: Pergola
- Colour: Ruby red
- Nose: Vinous, fresh and fruity notes with scents of black cherry
- Mouth: Vivid, fine and slightly mineral with a warm finish
- Winemaking: The manual harvest takes place at the end of September. Maceration and fermentation last for about 10-15 days and they take place in stainless steel tanks, where the wine rests for about 5 months before being bottled
- Alcohol content: 12,5%
- Serving temperature: 12° - 14°C / 53°-57°F
- Food pairing: Cold cuts, fresh pasta with meat ragù, white and red meat
- Consume: 3 years

Valpolicella Ripasso D.O.C.
Our intense and round Valpolicella Ripasso with a spicy bouquet and an enveloping taste

- Grape varieties: 65% Corvina, 15% Corvinone, 10% Rondinella, 10% other red grape varieties
- Soil: Limestone
- Training system: Pergola
- Colour: Deep ruby red with purple hues
- Nose: Intense and spicy, with notes of cherry and red fruit jam
- Mouth: Warm, intense and persistent with a good acidity
- Winemaking: the harvest takes place at the end of September/ beginning of October. The selection of the grapes is an important step for obtaining our Ripasso. From the selected grapes, we obtain the wine Valpolicella. In February, we put it in contact with the skins of the Amarone. This technique (which is called Ripasso) lasts about 20 days. In these days, we do several pumping over and punching down at a controlled temperature. In this way, we have a second fermentation that is necessary to obtain the Ripasso. After the refinement the wine ages in the bottle.

Amarone della Valpolicella D.O.C.G.
Our noble, elegant and full-bodied Amarone della Valpolicella. A warm and structured wine, with notes of red fruits and spices.

- Grape varieties: 65% Corvina, 15% Corvinone, 10% Rondinella, 10% other red grape varieties
- Soil: Limestone
- Training system: Pergola
- Colour: Deep ruby red with purple hues that turn into garnet with aging
- Nose: Ample and complex with notes of black cherry and red fruits in spirit. Hints of dried fruits, cinnamon and black pepper.
- Mouth: Warm, full-bodied and persistent with smooth tannins
- Winemaking: the harvest takes place at the end of September, beginning of October with a great selection of the healthiest and loosest bunches. The selected bunches are carefully laid in crates, which weigh 6 kilos (13 pounds), for the drying process (appassimento). The appassimento lasts about 100 days and grapes loose about 40% of their weight. The following steps are destemming, crushing and fermentation. The fermentation takes place for about 30 days in steel tanks at a controlled temperature. The long refinement is then followed by a slow aging in bottle.

- Serving temperature: 16° - 18°C / 57° - 64°
- Food pairing: Grilled and braised red meat, game, aged cheese. Perfect on its own after the meal as “social wine”

Recioto della Valpolicella D.O.C.G.
Our Recioto, sweet and nice, pairs perfectly with dessert and…

- Grape varieties: 65% Corvina, 15% Corvinone, 10% Rondinella, 10% other red grape varieties
- Soil: Limestone
- Training system: Pergola
- Colour: Deep ruby red with purple hues
- Nose:Intense with notes of black cherry and cherry under spirit with a final note of bitter almond
- Mouth: Warm and structured characterized by a nice sweetness
- Winemaking: The harvest takes place at the end of September, beginning of October with a great selection of the healthiest and loosest bunches. The selected bunches are carefully laid in crates which weigh 6 kilos (13 pounds) for the drying process (appassimento). The appassimento lasts about 100 days and grapes loose about 40% of their weight. The following steps are destemming, crushing and fermentation. Unlike Amarone, the fermentation of Recioto lasts about 15 days in order to obtain a dessert wine with more residual sugar and less alcohol if compared to Amarone. Refinement for about 9 months.

tulle
Prosecco D.O.C.
Our Prosecco, that gently tickles your palate, is the king of the Aperitivo

- Grape varieties: 100% Glera
- Soil: Medium consistency soil rich in clay and sand
- Training system: Guyot
- Colour: Light straw yellow with a fine and persistent perlage
- Nose: Floral and citrusy notes with hints of white peach, pear and apple
- Mouth: Elegant, fresh and delicate on the palate
- Winemaking:The harvest takes place in September. After the pressing, the grapes ferment at a low controlled temperature. The re-fermentation in the autoclave (charmat method) lasts minimum 60 days
- Alcohol content: 11%
- Serving temperature: 6° - 8°C/ 42°-46° F
- Food pairing: The king of the Aperitivo. Perfect with all starters, fish main courses and white meat
- Consume: 1 year

Pinot grigio delle Venezie D.O.C.
Our silky and fresh Pinot Grigio pairs with every light meal

- Soil: consisting of clay and sand that confer freshness
- Training system: Guyot
- Colour: Straw yellow
- Nose: White floral scents and notes of ripe fruits like apple, pear and banana. Slightly grassy.
- Mouth: Silky, fresh and with a good drinkability
- Winemaking: The harvest takes place on the last days of August. The grapes undergo the white vinification. The fermentation lasts for about 15 days at a controlled temperature. Before the bottling, the wine rests on its lees in stainless steel tanks for about 5 months

- Serving temperature: 8° - 10°C/ 46°-50° F
- Food pairing: Seafood, white meat and vegetable pie
- Consume: 1-2 years

Soave D.O.C.

- Nose: Intense floral scents with a final note of honey and exotic fruit

- Winemaking: The harvest takes place at the beginning of September. Then the temperature controlled fermentation starts and lasts approximately 15 days. Long refinement
